Boat almost dies after going wide open for 30 sec

This was a few months ago. My buddy and I had gotten to the lake before the wives got there. The lake was calm...wanted to see how fast my boat would do.

Got it up to just about top speed, as well as max RPM rated from the manuf.(4800 RPMs) and its like someone took the throttle and moved it back to neutral. As you slow down you put it in neutral and it idles fine, and you can start back up...

I guess I should put a fuel pressure gauge on it to see if maybe its a fuel supply issue, but I wasnt sure if it was a safety item that cuts off spark or something after running wide open for a while. Now if I trim it back to 4400, its fine.

Also, any idea where to find sierra fuel/water seperating filters? the sticker on mine says to use a 35-805269 filter, but I cant find one anywhere online...
