Need Ideas for Pot Luck

Later this month our club is cruising over to the new Ebony Boating Club near Antioch. On Friday night we are having a potluck. I need some ideas. The galley on my boat is pretty disfunctional. I usually BBQ or use my one burner Mr Stove. Help!!!
 
1)Potato salad 2) smokey links in BBQ sauce (crockpot) 3) taco salad dip (medium sized plate. cream cheese mixed with sour cream, fold in one packet of taco seasoning. Spread refried beans over plate, layer sour cream mix over beans, layer of lettuce, layer of cheese, add olives if desired) fantastic as a nacho chip dip. 4) Baby shrimp and dip 5) Sloppy Joes 6) Kicker Burgers...email me for the receipe.

I second the crockpot approach. Pre-prepare some stuff at home, throw it all in the crockpot when you reach the marina.

You're killing me ... I have a hundred funny suggestions, but in this era of political correctness, I can't post them even as a joke.

I like crab dips, smoked ribs and things than be prepared at home and simply have to be warmed up on a BBQ or in the oven on the boat.
 
Swedish meat balls are always a hit and can be done on stove top or crock pot.
 
Thanks for the ideas! I think I'll find something for the crockpot.

Dave, email me with your "ideas".....I'm always ready for a good laugh! BTW----who said I have an oven on the boat???? Hey, it's a 22 footer......need I say more?????

Mike, I always [well almost always] enjoy your input even if you don't live/boat around here. Heck, even in Minn, they have pot lucks, right?!!!!
 
...and my favorite quickie BBQ sauce for crockpot weinies is one part yellow mustard and one part grape jelly. Sounds iffy, but tastes great.

I always like using the slow cooker. Essentially it's a big crock pot. Just throw the meat and veggies in and forget about it for six hours. It is fool proof cooking and the meat always comes out tender and juicy. It is the way to go especially if you get really hammered. You don't have to focus on the cooking. Even if you leave it on a little longer, the meal won't be ruined.
 
Everyone loves this one............
little meatballs (I buy the bags in Costco), 12 oz jar of chili sauce, 12 oz jar of grape jelly. Mix the two jars real good and add the meatballs. I like to do it in the crockpot and let them slow cook for hours but you can do it on a stove top too. They are always the hit of any party and one of the easiest things to make!
 
Liz, here is a salsa recipe the Admiral and I have been making for about 20 years. It's easy to make and can be made a day or 2 in advance, gets better with age, goes well with tortillia chips.

Harlan & Lil’s Salsa

2 to 4 each jalapeno peppers
1/3 to ½ of medium bell pepper
1/3 of medium onion
1 clove garlic

Pulse in food processor and add:

1 tablespoon chopped fresh cilantro
½ teaspoon cumin
1 tablespoon lime juice (1 small lime or ½ large lime)

Pulse processor and add:

1 can tomatoes (11 oz) drained well (I use diced)
1 sm. can tomato sauce
1 teaspoon salt

Pulse and adjust seasonings. Start with 2 jalapeno peppers first then add more at end if not hot enough. The lime juice is probably a little more than a tablespoon.
 
Don't forget the pan full of Rice Krispie bars.
