I need to remove the plastic rivets that fasten the white cockpit panels to the stainless rails on my '97 325 Aft Cabin. Is there a secret tip that makes these things easy to remove?

Plastic rivets? Can you post pictures? Are you sure they aren't screw cover caps that just pop off to reveal the screw head?

Just use small flat punch and punch it thru.

I talked to Carver tech support this afternoon and they said to just drill them out, even though they are plastic (or nylon).

How do you replace them?
As for drilling them out the should be easy this is how i would remove all rivits mental as well.

The new/unused rivets push in to the holes and they have a long mandrel (?) protruding from the head. You gently tap it in with a mallet or some kind of hammer until it is flush with the head. I works kind of like a wall anchor with the sides of the rivet spreading out inside the rail as the mandrel is pushed in.
