Understanding how the fresh water pump works

Fresh Water Pump breaker on the panel.

On our previous boat (2000 Maxum 2400 SCR), if we wanted fresh water we had to flip a red pump switch, get our water, then flip the switch off. There was nothing on the electric panel.

On the Sundancer it appears to me we can leave the fresh water pump breaker "on" and we will always have freshwater at the faucets. The pump will kick on as needed to build up pressure. Is this correct? Kind of like the vacuuflush system. When I flip the fresh water pump to "On" I hear the pump run for a minute or so and then it shuts off.

Now the problem. With the fresh water pump breaker "On" we get spitting from the faucets, like there is an air bubble in the line. It never goes away, hot and cold sides. If we leave the pump on for while then come back, same thing.

If I remove the fresh water cap outside the boat to fill up the fresh water tank, stick a fresh water hose in it and turn the hose on we get good constant pressure from our faucets. As soon as I turn the exterior hose off we get spitting again.

Any idea what's going on?
