dorado fishing how to?

I am new to salt fishing in the deep. I would like to catch some dorado anyone have some good methods. I am fishing in the gulf out of Freeport, TX.
 
When I used to fish them with a friend off the coast of S. Fl. we would rig thawrd squid on a hook so it wpuld troll in its natural swimming state. Then head for deep water and troll along a floating structure that had been in the water long enough to attact bait fish around it... grass, buckets, a hunk of wood. Once we had one hooked we'd bring it close to the boat but not land it. Then start tossing bucktails rigged on light tackle to catch the ones that were drawn in by the action of the one caught on the troll. Always had great luck and caught plenty of the tasty fish. The light tackle action was the most fun.
 
Mike has it, also look for diving birds, a good sign of bait fish.
Ballyhoo are also used as bait here in FL.

I caught a lot of them under Sargassum mats using double shad rigs and spinning tackle ( really. Great fun! )
 
Those are some great tips thanks a lot. But what is a double shad rig?
 
Basically two lead heads with dusters rigged so one follows the other. Common rig available at the jumbo general retailers and sports retailers. A real common plain cheap artificial bait. Small. each lure is about 2 to 3". Good for school dorado as well as the big ones.

Usually works if the school is active anyway ( at that point they will eat just about anything. )
 
also when trolling how fast do you go with live, dead, and artif?

Idle speed with rigged dead bait and Lures,Chum always helps. unless looking for Wahoo, 1100/1500 RPM. We have caught Wahoo,Cuda and kings at the higher speeds.
Drift with live bait or bump the engine in and out of gear just to keep your bait away from the boat and hold the direction you want to go.
Drift live bait near surface for Sailfish. A small balloon about 10/15 ft from bait helps to keep bait near surface.
 
When you are talking about dolphin fishing and fresh Mahi-Mahi on the grill....well, there are no bad ones!!! They're all good!
