holeshot performance puzzle??

[31 fountain]

I recently purchased a used 31 fountain in good condition however, when full of fuel (200gals)it seems to have poor holeshot performance and does not plane very quickly. When planeing max RPM is about 3000 until on plane. Wide open throttle runs at 5000 rpm on both engines, full fuel load. (250 hp each) one of the props has a very minor ding in it at the tip. It seems to me it should jump out of the water?? Boat weighs 4800 lbs. Any thoughts??? Any help would be greatly appreciated!!
