Running a 1985 270 Sundancer at low idle speed, the boat walks from side to side. You have to constantly adjust the steering to maintain a straight course. The tabs are up and the twin drives show down. Is this characteristic of this model or any ideas?

Very common with I/Os at slow speeds. Tabs down may help (or may make it worse), but give it a try. Drives down is a good idea as that gives you more steering control.

I have a 2002 SR 176 that does the same thing. My wife hates to drive it at slow speeds because of it.

They all do that, usually made worse by over steering (both too much turn and too often).

It's torque steer some times called i/o wandering.
