What would you use to cover these interior topsides?

The v-berth in my Viking is pretty rough. Boat is somewhat of a leaker, while I’ve made some progress fixing deck hardware, and ports that leak, it’s not going to be dry this summer. The interior “walls” used to be covered with carpet, that was always damp, and moldy. I tore that out last fall, but haven’t done anything to replace yet.

Still not sure what I’m going to do - but I guess I need something that doesn’t mind being wet on occasion. I could perhaps just paint over what is there, but that would look like hell. Or leave it as-is until I fix every last leak, and then cover it with foam and vinyl, or some other wall covering? Or maybe glass over what is there with a fairing compound, and then paint or gel coat?

Anybody have any luck on a redo with similar situation?

I ripped out the old vinyl headliner and fabric in the old Trojan several years ago, painted the fiberglass and replaced the fabric and vinyl with wood.
