Kurt getting suggestions from the refit company is fine, ultimatums not so good. If I were you I would take the a ala-carte approach. So far they have given you 2 suggestions or must do's(s) that are not required.

14k btu is too much for that aft stateroom, 9k should be plenty. In the main cabin a 16k should be plenty to keep the galley and forward Vee berth cool as well
Is this a single or twins? If twins I don't think you lol have room to put remote condensors on the ER, even with a single they may be hard to reach. I d stick with all in one ACs, they ve gotten significantly quieter. I got a 16k marvair last year that was on sale from defender for $990, installed it in my saloon forward and it s very quiet. The air handler of the split unit in the back is almost louder
